Ingredients
2 Eggs, whisked
1/2 Cup Broccoli, cooked (mine was roasted with a touch of lemon juice, leftover from dinner the night before - I definitely recommend this version)
2 Ounces Sharp Cheddar Cheese, shredded or thinly sliced
1/2 Teaspoon Bacon Grease or Grassfed Butter, Ghee or Coconut Oil will work as well
1/2 Serrano Chile, Minced (optional but such a great addition)
Directions
In a small nonstick pan, melt your
fat of choice
Raise the heat to medium high
Place half of your cheese on top of the fat and allow to cook briefly
Add the broccoli, half of the chile and pour over the eggs.
Reduce the heat to medium low
Cover and cook until the bottom of the eggs begin to set.
Sprinkle remaining cheese and Serrano chile over the top and cook covered over medium heat until the egg is cooked through.
Serve and enjoy!
This can also be baked at 375 for 20 minutes or so instead of pan fried.
