Ingredients
8-9 Large Cooked Shrimp, peeled and deveined, I like mine with the tail on
1/2 clove garlic, minced
1, 8oz pack of miracle rice, drained, rinsed and dried out until no water comes off it, in a dry pan
1 tablespoon butter or olive oil
1 tablespoon chopped Italian parsley
1 Roma tomato, seeded and chopped
The juice of half a lemon
Sea salt and pepper to taste
Crushe red pepper to taste, optional
Directions
Melt butter in a medium hot pan
Add garlic and cook for one minute
Add in shrimp, salt lightly, and heat turning once
Add in tomato and parsley, stir once and add in Shrataki
Season with sea salt, pepper, and crushed peppers
Serve
Squeeze the juice of the lemon over the top and leave as garnish in case more it is needed
