Heart of Palm, or Palmito is one of my go to snacks and favorite veggies. I love the tartness and texture and since they are low on the carb count they are perfect for Keto-ers! This salad ended up tasting like ceviche without all the chopping work!
Ingredients
1 Can Heart of Palm, (roughly 1 1/2 cups) chopped
1 Tablespoon Cilantro, Chopped
Juice of 1 Lemon or Lime
5 Large Shrimp, Cooked and Peeled
Sea Salt and Pepper to Taste
1/4 Of a Whole Serrano Chile, minced (optional)
1 Teaspoon Olive Oil
Directions
Mix all ingredients and allow to sit for at least 30 minutes before serving.
