A hail storm just passed over us and it inspired me to bake. I started off with a simple chocolate donut hole recipe that I found online and built from there. You can eat these as donut holes and just smother them in chocolate if you'd rather not make the marshmallow fluff but I promise you, the fluff is super easy to make! Enjoy!
Ingredients
For the donut holes
3 Eggs, separated
1/4 Cup Psyllium
1/4 Cup Almond Flour or Meal
1/4 Teaspoon Baking Powder
2/3 Cup Stevia or Other Sweetener
1/4 Teaspoon Baking Powder
2 Tablespoons Cocoa Powder
A pinch of salt
A dash of cinnamon
2 Tablespoons Melted Coconut Oil or Butter
For the marshmallow fluff:
3 egg whites
1/2-1 Cup Sweetener
A pinch of salt
A drop of vanilla extract
For ganache:
16 Chocolate chips
1 tablespoon milk of choice
Directions
For the donut holes:
Preheat oven to 350
Whip egg whites to stiff peaks
Mix egg yolks and all other ingredients
Gently fold yolk mixture into egg whites
Place mounds onto a donut pan, or use an ebelskiver pan like I did. A lined cookie sheet works too.
Bake for 15 minutes until they pass the toothpick test.
For the marshmallows:
Whisk egg whites, stevia and salt in a double broiler for 5 minutes until heated through
Remove from heat and whip for 5 minutes until smooth and fluffy.
Use immediately.
For ganache:
Melt chocolate with milk in a microwave safe bowl (for 30 seconds) or double broiler (mixing as you go).Do not over heat as the chocolate will seize up.
Mix with a spoon until smooth and use immediately.
