1/4 Cup Sour Cream or Almond Milk
2 Packages Miracle Rice, washed and pan dried
1/2 Teaspoon Cinnamon
1/4 Teaspoon Ground Vanilla Bean, extract will work too
1/4 Cup Sweetener of Choice
1 Tablespoon Grass Fed Butter (optional)
1 Tablespoon Chia Seeds
In a sauce pot melt the butter
Add in miracle rice, cinnamon and vanilla. Stir to combine.
Add in sour cream or almond milk and sweetener. Stir until sweetener is dissolved in the mixture. If too dry add more sour cream or almond milk.
Remove from heat and add chia seeds. Stir well and allow to "gel" for at least 30 minutes. I served this with whipped cream. If the pudding is too dry for your taste you can add more sour cream or almond milk at any time including after it "gels." Enjoy!!!!
