I wish I had a better picture to share with you but this was the only shot I took before devouring this bowl. I've always loved Thai Coconut Chicken Soup and I decided to make it the other day for my friend @naddy79. She loved it and I hope you do too!
Ingredients
2 Cups Chicken Stock/Broth or water with boullion
1 Can Coconut Milk
1/4 Cup dry Shiitaki mushrooms, or 1-2 cans drained straw or oyster mushrooms, fresh mushrooms will work as well)
1 Tablespoon Sambal (more or less to taste)
Chili Oil to Taste
The juice of 1-2 limes
1/4 Bunch of Cilantro
1 Chicken Breast sliced thinly or leftover cooked chicken
1/4" Piece of Ginger sliced thinly
1 piece Lemongras, bruised lightly (hit it with the coconut milk can), and sliced into rough segments (optional)
Directions
In a pot mix all ingredients except cilantro and simmer until chicken is fully cooked. Before serving add cilantro and garnish with chili oil and more Sambal.
