Ingredients
4 Cups Chicken Broth (or 4 Cups Water + 2 Tablespoons Boullion)
2 Cups Spinach
8 Asparagus Spears, roughly chopped
9 Meatballs or 1 pound sausage of choice
1 Bag Miracle Rice, rinsed
1 Cup Half & Half
1-2 Tablespoons Butter (if desired)
2 Slices Bacon, Cooked
Directions
Bring broth to a boil
Add in spinach and asparagus, boil for roughly 5 minutes
Mix broth and veggies in a blender
Return to pot and add half and half and butter.
Bring to a boil and add in meatballs and miracle rice.
Boil until meatballs are cooked through.
Remove from heat and serve immediately.
I served mine over leftover stuffed pork chops and it was delicious!
Optional - garnish with ground pork rinds or herbs
