I woke up feeling OH so lazy today...I think it's due to my lack of sleep last night thanks to our teething baby. I have also been thinking of making myself a microwave bagel ever since I saw a picture if a microwave pizza crust on IG. Today seemed like the perfect day to experiment. I went about making a small portion of my low carb psy bread and forming it into a bagel shape on my plate. I then microwaved it and to my surprise, it turned out pretty well! Although I must say it didn't quite retain its bagel shape...still, it satisfied my bagel craving without grains, yeast and with a bare minimum of carbs.
Makes one 6 inch individual "pizza crust," "flat bread," "hole-less bagel" or whatever you want to call it.
Ingredients
1/4 cup and 1 teaspoon almond flour
1 tablespoon psyllium husk
1 egg white, whisked
1/2 teaspoon baking powder
1/4 cup boiling water
Spices if desired (garlic powder, onion powder, poppy seeds, Italian spices) you name it, get creative.
Directions
Mix all dry ingredients
Add egg, mix well
Add boiling water, mix well
Plop onto a microwaveable plate and microwave for 2-4 minutes (depending on your microwave)
Allow to cool before removing from microwave.
I folded mine over like a taco and put the cream cheese in the middle. You can also slice through the middle for sandwiches, etc. From what I hear, lightly greasing the outside f the dough before cooking makes for a different "pan pizza" texture.
