Growing up in Mexico City one of my favorite botanas, or appetizers, was Queso Fundido - melted cheese. Traditionally melted in a clay dish placed in the oven using add ins such as chorizo or mushrooms, queso Fundido is a simple yet delectable way to enjoy a snack or meal. Mix in variations are seemingly endless as are the cheeses you can choose to melt. I adore how within just a few minutes of heating the cheese takes on the flavor of its toppings creating a new palatable delight. Think of Queso Fundido as fondue's fit cousin, the one that looks good naked and can be dressed up in anything while still looking amazing!
Below are the queso fundido basics. Play around with them and enjoy slathering them on anything from bacon to psyllium crackers or warm psyllium tortillas.
Ingredients
3 oz Meltable Cheese, mozzarella works very well for this
1/2 teaspoon fresh herb of choice, epazote, cilantro, and chives are marvelous
1/2 teaspoon of another topping such as chipotle peppers, minced sautéed mushrooms, cooked chorizo or pulled pork
An oven or microwave proof bowl with lid (or a small plate that fits over it).
Directions
Place cheese in bowl, toppings spread evenly over the top
In a hot oven (350-400), toaster oven, or microwave, melt the cheese until the sides start to make bubbles - for microwave this takes roughly 1 minute
Carefully remove from heat (do I really need to remind you that BOTH plate/bowl and cheese will be hot?)
Serve and eat as soon as cool enough for your liking.
