It's been a gloomy day in Southern California and I wanted something warm and comforting this morning to bring a little sunshine into my day! So I came up with this little puppy. It vaguely reminds me of oatmeal without the grains. I hope you like it as much as I did!
This makes two servings
Ingredients
For the pudding
1/2 a banana
1 Apple
1 Egg
1/2 Scoop of Vanilla Whey Protein
3 Tablespoons Coconut Milk
1 Tablespoon Roasted Pecans
A dash of cinnamon
A dash of nutmeg
For the topping
1/2 Cup Pecans
1 Tablespoon Coconut Shreds, unsweetened
1 Tablespoon Stevia (honey or splenda work too)
1/2 Teaspoon Ghee
A pinch of salt
Directions
For the pudding
In a blender, mix all ingredients except nuts, until smooth.
Add nuts and pulse until they are broken up a little
Pour into microwave safe bowls and microwave for 2-3 minutes until the pudding is set and not runny, your time may vary depending on microwave power and the size of your bowls.
For the topping
While your pudding is in the microwave, heat ghee in a small nonstick pan
Add in nuts and coconut, top with stevia and mix up a bit
Pour over pudding as soon as you remove from the microwave (careful the bowls will be hot!)
Sprinkle with a pinch of sea salt
Enjoy!
