One of the concerns that my hubby and I had when going paleo was that we would miss out on some of the delicious Filipino dishes we both love. Pancit, lumpia, white rice, and all the yummy rice based desserts. While I can't promise that I will ever attempt a paleo version of the rice desserts (that would be next to impossible) I did decide to try my hand at a paleo pancit. This recipe is adapted from a traditional recipe taught to me by a family member. I hope you like it!
Ingredients
1 Spaghetti Squash, roasted and "spaghetti-ed" (I prefer to keep mine a little al dente)
1 Small Cabbage, shredded
6 Cloves Garlic
1 1/2 Cups Mirepoix (diced celery, onion and carrot - I dice mine ahead of time and portion freeze for easy week night dinners)
Coconut Aminos (to taste)
Black Pepper (to taste)
Sea Salt (to taste)
Calamansi or Lemon Juice (to taste)
1 Tablespoon Coconut Oil
1-2 cups cooked shrimp or shredded chicken (optional)
Directions
In a heated (high heat) wok or large pan melt the coconut oil until it looks watery (be careful it will be VERY hot).
Add your garlic, then layer without stirring - mirepoix and cabbage
Reduce heat to medium
After a few minutes (when the cabbage starts to look slightly steamed) layer on your spaghetti squash
Allow to cook without mixing for another two to three minutes
Now, gently fold together all the ingredients until well mixed (this is when you would add your shrimp or chicken)
Season with aminos, pepper, calamansi or lemon juice, and salt
Serve up with some yummy bbq sticks or enjoy alone!
