I follow an amazing woman lowcarbella, who has some of the most inventive uses for low carb ingredients that I've ever seen. She has this coffee custard that just looks to die for! Since I don't have a few of the key ingredients I had to work out my own quick fix to tide me over until I go to the supermarket for more supplies. While its definitely not as silky an beautiful as Ella's this rendition did the trick of satisfying my craving and would be a good spur of the moment dessert option.
Makes one 97 Calorie serving 5.5g Fat, 3.4g Carb, 8.3g Protein
Ingredients
1 egg, whisked
2 Tablespoons Evaporated Milk - all I had was 2% so this is what I used, this would work with half and half too (paleo use coconut milk, canned or carton - canned will yield a thicker flan consistency)
2 Tablespoons Coffee
1/4 Cup Stevia or whatever your sweetener of preference is
For topping I used whipped, cinnamon and a pinch of cocoa powder
Directions
Whisk the egg well
Add other ingredients and whisk again
Place in a microwave proof container
Microwave for roughly 2 minutes
Too will whipped and enjoy!
