You'll have to forgive me, I found this cracker recipe online and I can't find the source anymore. Just know, it's tasty and reminds me of Ak-Mak crackers. In fact, next time I'll probably add some sesame seeds to complete the texture.
Ingredients
1/4 Cup Flax Meal
1/4 Cup Water
1/4 Teaspoon Onion Powder
1/8 Teaspoon Sea Salt
1/2 Teaspoon Italian Seasonings (for pizza version)
Directions
Mix all ingredients and allow to sit for 3 minutes
Place on a parchment or silpat lined plate.
Cover with parchment and smooth out to desired thickness. I just use a fork to shape it without covering the top. Pizza crust will need to be thicker than crackers. My crackers were about 1.5-2 mm thick and the "pizza crust" was more like 1 cm thick.
Remove top layer of parchment and microwave for 1-2 minutes until crispy. The pizza crust will be less crispy and more chewy.
For the pizza, add toppings and microwave for another minute or until your toppings are melty and delicious. Just a note, go easy on the sauce as this crust is very light and will break if the toppings are too heavy.
