My hubby loves filipino polvoron. I'm not gonna lie, I myself think it's pretty fabulous too! Tonight I decided to attempt a low carb mostly paleo version and it turne out pretty well! I don't own a polvoron mold so I had to press these into ramekins and we ate them with spoons. I'm my sure how they'll mold up but I'm sure that if they are too loose more fat can be added to the mixture to hold them together.
Ingredients
1/4 cup coconut flour
1 scoop vanilla whey protein
3/4 cup stevia
1/2 cup powdered milk (optional but this is a key to polvoron, if you opt out of the milk add more whey and coconut flour in its place)
1/4 cup melted butter or ghee
A pinch of sea salt
1/2 tablespoon PB2 (optional, I didn't use it in my version)
Directions
In a pan, toast coconut flour until golden brown
Add remaining dry ingredients, mix well
Add in melted fat, mix well
Put into molds or ramekins
Enjoy!
