Today was the last day of my Fat Fast, woo hoo for making it to the end without going ballistic and eating everything in sight!!! So I've already given you my schpeel on why I insist on making myself decadent tasting desserts especially when I'm putting myself in a bit of a tight position macro-wise so I'll spare you a repeat. Today's cheesecake was inspired by the beautiful raspberries that we got for a steal at the farmer's market this past weekend. Also, since it was warm today, that berry taste was nicely refreshing!
Ingredients
2 ounces cream cheese
1/2 tablespoon coconut oil
1 teaspoon raspberries
Sweetener to taste
Directions
Mix all ingredients until smooth (heat coconut oil and cheesecake if needed but do not heat the raspberries)
Chill in fridge until firm. You can flash chill this in the freezer but be careful not to freeze it :)
Mix vigorously before eating and enjoy!
