This would look a million times better if I had a ring mold and my dishes that are in storage at the moment but this will have to do for now.
I made a simple "pancit" out of shredded cabbage, got out some lean high quality corned beef hash, sautéed it up with onions, garlic and tomato, and scrambled up some eggs to place on top. Since I'm addicted to nori, I added a little sliver on top. Below is the cabbage pancit recipe I used, feel free to adjust as needed.
Ingredients
1/2 Onion, Chopped
5 Cloves Garlic, Minced
1 Head Cabbage, Shredded
1/2 Cup Carrots, Chopped
Coconut Aminos, To Taste
1/2 Teaspoon Coconut Oil
Pepper, To Taste
Shichimi Togarashi, To Taste (optional)
Lemon Juice, To Taste
Directions
On high heat, melt coconut oil
Add in layers, garlic, onion, carrots, cabbage, lower heat to med-high
Cook without stirring until cabbage starts changing colors
Mix and continue to cook until the desired consistency is reached
Add Coconut Aminos (I used 1 Tablespoon), pepper and Shichimi Togarashi
