Ingredients
1 1/4 Cup Almond Flour - I use almond meal
5 Tablespoons Psyllium Husk
1/2 Cup Stevia or Sweetener of your Choice
1/2 Teaspoon Cinnamon (more or less to your taste)
1/2 Teaspoon Sea Salt
2 Teaspoons Baking Powder
3 Egg Whites
1 Cup boiling water
Cinnamon Streusel Topping / Filling
Streusel topping:
1/2 cup almond meal
2 Tablespoons Cinnamon (or more to taste)
1/4 Teaspoon Salt (I love balancing sweet with salty)
1/4 Cup Stevia
1 Tablespoon Cold Butter or Coconut Oil
Directions
Preheat oven to 375
Mix streusel/topping ingredents being careful not to break up the butter too much. Once mixed, pop this in the fridge til you are ready to use.
Mix together dry ingredients
Add in eggs, mix until well combined
Add in boiling water and stir vigorously until well combined
Plop mixture onto a pan and flatten slightly (1 inch thick or so)
Place streusel in the center of the flat loaf (think of the loaf as a burrito of sorts) and spread it out slightly but not enough to break up your clumps.
Roll up the flattened loaf and leave the seam on the bottom. Tuck the ends of your bread "burrito" slightly under to avoid having that precious streusel from spilling out.
If desired add some streusel to the top of the loaf too.
Now bake for 45 minutes and do not remove early.
