I had a little leftover coffee yesterday and decided to make café mocha pops since the weather has been pretty toasty lately. I added chia seeds in the mix since I like the extra texture they bring to the party, although they all managed to sink to the bottom of the pop so next time I'll probably skip them.
Ingredients
1 1/2 Cups Brewed Coffee
1 1/2 Cups Milk of Choice, I used heavy Whipping Cream since its what I had on hand but dulce de leche would be an amazing replacement
2 Tablespoons Sweetener (more or less to taste)
2 Tablespoons Cocoa Powder
1 Envelope Gelatin
1/4 Teaspoon Vanilla Extract
Directions
Dissolve gelatin packet in cold milk
Add in cocoa powder, vanilla and sweetener, stir to combine
Bring the coffee to a boil
Mix coffee and milk mixture
Taste, and adjust the sweetener and cocoa powder
Pour into Popsicle molds and freeze, or pour into bowls and refrigerate until firm and mousse like.
