I was playing in the kitchen last week and decided to make my baby girl a batch of "oatmeal cookies" sans oatmeal. I wanted to make something that would have a good mouthfeel and a little sweetness. This is what I ended up with. My hubby says they remind him of mini cinnamon rolls while they make me think of muffin cookies since they are light and airy in the center. I skipped on adding dried fruit or chocolate chips to these and they were mighty tasty. Although I'm a HUGE fan of oatmeal chocolate chip so I'll probably add some chocolate the next time I bake these up!
Ingredients
3/4 Cup Almond Flour, Meal, Ground Almonds (whatever)
1 Tablespoon Psyllium Husk
2 Tablespoons Flax Meal
1/4 Cup Applesauce (may sub with water for a lower carb count)
1 Egg
2-4 Tablespoons Sweetener of Choice (optional, the apple adds a good amount of sweetness to the recipe)
1 Teaspoon Baking Powder
1 Tablespoon Water
1/4 Dried Fruit, chopped; or chocolate chips of choice
1/2 Teaspoon Cinnamon (optional)
Grease for cupcake tin ( use a cupcake tin but you don't have to. It just makes perfect little circles for my baby to hold)
Directions
Preheat oven to 375
Grease a cupcake tin or line a cookie sheet with parchment
Mix all ingredients and allow to sit for about 2 minutes so everything gels.
Place small 1 tablespoon mounds in cupcake tin or on cookie sheet
Bake for 15-20 minutes until springy to the touch.
Cool and enjoy!
