For the cake
1 cooked medium sized sweet potato (about 1 1/2 cups)
1 avocado
3 eggs
1 cup cacao or cocoa powder
1/4 cup chocolate protein powder
1 1/2 cups sweetener (more or less as desired)
1 tablespoon vanilla
1/2 teaspoon sea salt
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 cup milk of choice
1/4 cup brewed coffee
A few chocolate chips to sprinkle over the top of each cupcake (if desired)
For the ganache
1 cup chocolate chips of choice
1 tablespoon butter or ghee
2 tablespoons milk of choice
Sea salt for sprinkling
Directions
Preheat oven to 350
Line a cupcake pan
In a blender mix all cake ingredients until smooth
Spoon mix into pan
Sprinkle chocolate chips if desired (the bug wanted to do this)
Bake for 25-30 minutes. They will fall slightly during cooling.
Remove from heat and allow to cool for an hour.
For the ganache
Add all ingredients in a microwave safe bowl
Microwave for 1 min, stir, then microwave for another 30 seconds and stir until smooth. If still hard cook in 30 second increments but don't overlook as this will cause the chocolate to seize.
Plop ganache on the cupcakes then sprinkle sea salt over the top. Allow to cool for a few minutes and enjoy!
