This is one of my favorite side dishes for steak, although to be honest it can be used with chicken, burgers, in casseroles, over grilled portobellos and in "faux" quesadillas. It adds a touch of decadence to anything you pair it with!
Ingredients
2 cups sliced mushrooms (I used white) - make sure the mushrooms are dry, excess water kills this dish
4 cups baby spinach, cleaned
6 cloves garlic, minced
1 teaspoon fat of choice
2-4 tablespoons heavy cream or other milk of choice (optional but an amazing addition)
1 1/2 ounces blue cheese, crumbled (this is to taste so use however much you want)
1/4 teaspoon ground thyme
1/2 teaspoon fresh or dried chives
Sea salt and pepper to taste
Directions
Over medium heat melt your fat (if using butter, brown it)
Add in garlic and mushrooms and sautée over medium low heat until the mushrooms are almost cooked through
Add in cheese and mix over medium low heat until well combined
Add in cream and spices and mix
Allow mixture to come to a simmer and reduce slightly, taste and adjust spices as needed
Add spinach and toss over medium heat until wilted
Remove from heat, plate and enjoy!
