Hello again darlings! Thank you all for continuing to check my blog despite my silence for months on end! About two weeks ago I started back on my Lowcarb lactopaleo track. I struggled with myself after having my son and decided to allow myself a few (super damaging) months of cheating. Those months have come and gone and now I'm back on track with no regrets and feeling significantly healthier than I have all year!
Today I made my hubby a batch of Carne Asada fries. We had some leftover spicy pork bulgogi that I threw in the mix for a bit of a fusion fry fiesta! Next time I'll probably add kimchi or spicy radish to the mix but today I opted for simplicity.
Ingredients
2 tablespoons fat of choice (I used bacon fat and butter)
1/4 teaspoon sea salt
1 large jicama peeled and sliced into "fries"
1 cup grated cheese of choice (skip or sub with daiya or almond cheese if paleo)
1 cup chopped leftover meat (I had a flank steak that I had left overnight in the fridge seasoned with paprika, Himalayan sea salt, lime and cayenne)
1 green onion chopped (not pictured)
1/2 avocado chopped or fresh guac
Salsa of choice
1 tablespoon (or more) sour cream (skip if paleo
Directions
Preheat your broiler to high
Melt fat and mix in sea salt
Toss the jicama in the fat/salt mixture and broil for 25 minutes (Alternately, you can bake for an hour and pan fry but I like the ease of broiling)
Once jicama is tender and crisped on the outside, top with cheese, meat, green onions and a little more cheese
Pop it under the broiler for 5 minutes until everything is ooey gooey
Top with guac, salsa, sour cream and anything else your heart desires.
Allow to cool slightly (mine was cool once I added toppings) and enjoy!
