The other day I sprained my ankle and had to find a quick and simple dinner. I wanted to use the HUGE pork chops that I had sitting in the fridge. So I put my thinking cap on and got to cooking. I served these with asparagus but I think they are best served drenched in the Green Italian Wedding soup that I just posted. The flavors that I chose remind me of my paternal grandmother who used onion and cheese in everything, I wouldn't be surprised to find a cake recipe that contained them! Ok I kid about the cake but still, these flavors remind me of my grandma Merle the Pearl so this recipe is dedicated to her memory.
Ingredients
5 Thick Cut (Double) Boneless Pork Loin Chops, butterflied
Sea Salt and Pepper for seasoning
Butter or Ghee for searing
Filling:
2/3 Cup Cream Cheese (paleo, skip and replace with sauteed bacon and mushrooms)
1/3 Cup Sharp Cheddar Cheese, grated
1/2 Cup Broccoli Florets, chopped
1/4 Cup Onion, grated or minced
1/2 Teaspoon Thyme
Directions
Preheat oven to 375
Mix together filling ingredients
Fill the pork chop as you would fill a soft taco, and press it together so it sticks
Season the outer pork with Salt and Pepper
In an ovenproof pan, sear (on the stove) pork chops until they are golden on both sides
Transfer the pan to the oven an bake until an instant read thermometer reads 160 degrees (or whatever your desired pork temp is)
