Ghee to lube up your nonstick pan (if desired)
1 Chicken Breast, butterflied
1/2 Teaspoon Sriracha (or more depending on taste)
Pinch of Sea Salt
Get your pan screaming hot
Melt your ghee
Sprinkle salt on one side only of your chicken, be conservative you really don't need the salt.
Place your chicken, salt side down in the pan
Cook until the sides start to lift off the pan
Squeeze the lime juice onto the raw side of the chicken and allow to cook for a few more seconds before flipping
Flip the chicken and sear the uncooked side
Put the Sriracha directly into the pan, into a puddle of melted ghee an chicken fat
Using a chicken breast spread the Sriracha around
When your chicken is fully cooked flip it over into the sauce a few times, turn off the heat and cover the pan for a minute while you get a plate.
Serve up with salad or some green bean (which can also be tossed in the pan sauce)
