Here is another dish that I was inspired to make by my instagram family. Using pork rinds as a tostada replacement is easy and flavorful, they can truly be the perfect vessel for any topping. I had shrimp in my fridge as well as some Guacatillo salsa so I quickly put this together and it disappeared just about as fast as it came to be!

Ingredients
Large pork rinds (I buy mine at the Mexican supermarket)
Ceviche Ingredients
1/4 Cup Guacatillo Salsa, recipe here
1 Cup Chopped Cooked Shrimp
1 Avocado, Cubed
1 Tomato, Seeded and Chopped
Garnish, optional
2 Tablespoons Crumbled Queso Fresco (optional)
Lime Juice
Chopped Cilantro
Directions
Mix all Ceviche Ingredients and refrigerate for at least 30 minutes.
Serve a scoop on pork rind.
