I stumbled on this Atkins recipe for Revolution Rolls last night and decided that today I absolutely HAD to try them! We will be using them tonight for hamburger night although from what I've read they are better the day after baking. Either way, they're a welcomed change from lettuce cups! Not that there is anything wrong with lettuce cups :)
Makes 6 Rolls
Ingredients
3 eggs, separated
2 Tablespoons home made mayo
1 Teaspoon Stevia
Other seasonings as desired (onion powder, Garlic powder, Italian seasonings, and rosemary are good options)
Directions
Preheat oven to 300 F
Beat egg whites until stiff peaks but before they become dry (make sure the eggs are stiff, otherwise your rolls will be flat like tortillas)
In a separate bowl, mix egg yolks, mayonnaise, stevia and any other seasonings you choose (I went for a pinch of salt)
Gently fold yolk mixture into egg whites until mixed (be very gentle and try not to over mix)
Spoon in mounds onto a foil or silpat lined cookie sheet (two heaping tablespoons per mound)
Bake for 60 minutes and DO NOT REMOVE EARLY as they will be too mushy inside to hold their form
Remove from oven
These rolls are crispy, if you want them Chewy put them in a plastic bag and seal it up, within an hour or so they start to get chewy. Again, from what I read they taste amazing the next day. I made a double batch today and will update my post to let you know how they were.
