Week nights can be pretty hectic. So I usually try to make fast cooking, low-maintenance and tasty dinners. This is a pretty standard dinner in our home, it can be made with chicken, pork or beef (although beef will take longer to cook).
Ingredients
6 Boneless Pork Chops or Chicken Breasts
1 Container Sliced Mushrooms (any kind)
6-10 Cloves Garlic, Minced
1/2 Teaspoon Boullion (any kind) or Sea Salt
1 Tablespoon Ghee
1 Cup Water or White Wine
Pepper to taste
3-4 cups spinach
Directions
In a large skillet melt ghee on med-high heat
Add in garlic and mushrooms and lower heat to medium
While garlic and mushrooms cook up lightly sprinkle boullion and pepper on the pork chops
Remove garlic and mushrooms from the pan and save for later use
Return heat to med-high and sear the pork chops to get a nice caramelization, when you flip them it will be time to reduce the heat to med-low, cook for 5-7 minutes until meat it cooked through
Add mushrooms and garlic into the mixture and pour in water or wine, increase heat to high and let it bubble until it reduces into a sauce at the consistency you like.
Cover with spinach and a lid
Let sit white you get your plates ready
Uncover, give it all a mix with some to ha and serve.
I like to serve this with oven broiled green beans (olive oil+garlic powder+hi broiler until done)
