1/2 Large Ripe Avocado, Peeled and seeded
1 Tablespoon Spaghetti or Pizza Sauce of Choice
1 ounce shredded cheese of choice(skip if paleo and watching dairy)
1 teaspoon cottage cheese (optional)
4 slices of pepperoni or meat of choice - ground beef would be a great addition
Place avocado in an ovenproof or microwave safe bowl (depending on cooking method of choice).
If using ground beef, add a small amount in the avocado hole.
Fill the avocado hole with cottage cheese and cover with spaghetti sauce.
Layer cheese and meat
Pop in the microwave for 1-2 minutes, or broil until toppings are bubbly.
Remove from heat, allow to cool slightly and enjoy!
