The other day I made "tortilla" chips and it got me thinking about making Sopes or Taco shells. This recipe isn't ideal for taco shells so I'll still have to work on those. What these are good as are Sopes or a thick tortilla base for Mexican pizzas.
Makes 10 thick tortillas about 6 in diameter. While I made round tortillas by painstakingly (sarcasm) pressing them in the tortilla maker and then cooking them individually on a griddle, I don't assume that you have a tortilla press so I will save you the pain and tell you to make a sheet and cut it into squares with a pizza cutter. Who said tortillas have to be round? Lol!
Ingredients
1 1/2 Cup Almond Flour
1/2 Cup Coconut Flour
1 Egg
1 1/2 Tablespoon Chia
1/2 Cup Water
2 T aspoon Olive Oil
1/2 Teaspoon Cumin
1/2 Teaspoon Onion Powder
1/2 Teaspoon Garlic Powder
1/4 Teaspoon Cayenne Pepper
1 Teaspoon Sea Salt
Directions
Preheat oven to 325
Mix chia, egg and water and allow to sit while you combine all other ingredients
With a fork beat egg chia mixture and add it into the dry ingredients
Divide mixture into two balls and roll out onto lined baking sheets. Roll as thick or thin as you would like.
Slice into large squares
Bake for 20 minutes or until they reach your desired doneness.
Note - you can also cook these on a griddle at medium heat
