I recently saw an IG challenge for "Overnight Oats" and thought to myself "aww bummer I can't enter." But then I had a second thought, "wait, why not enter a paleo version of oatmeal?" So I put my mind to it and started to think about all the things that "feel good" about a hot bowl of oatmeal on a cold day; the creamy texture, the warmth, the little random crunch of an undercooked oat, and best of all THE TOPPINGS! So here is my experiment, it tasted good to me, feel free to play with it yourself to see what you come up with.
Makes 2 servings roughly 250 cal each and no starchy carb
Ingredients
2 Eggs
1/2 Cup Almond Milk
1 Banana
1/4 Cup Dry Shredded Unsweetened Coconut
1-2 Tablespoons crushed nuts (I used macadamia since its what I had on hand)
Garnish
Any fruit or berry (I use strawberry)
Raw, Dry or Toasted Coconut Shreds
Whipped Coconut Cream (totally optional it's mainly for looks)
A few of the nuts you used in the batter
Perhaps a light sprinkle or salt
Instructions
Over low-med heat pour almond milk into a small (5 inch) nonstick pan
Add eggs and banana
Whisk and mash the mixture until its lumpy but pretty well combined
Keep whisking your mix until it starts to thicken
Add in coconut and nuts
Continue to whisk until the egg seems cooked (not scrambled eggs cooked, just until they are no longer translucent)
Remove from heat, serve up and garnish as desired

P.S. This is a good basic recipe that would do well will added cocoa powder, almond butter, or a myriad of other ingredients. Have fun with it!
