Thick Paleo Tortillas (1 per pizza)
1 lb Ground Beef
Taco seasoning (1/2 teaspoon each: cumin, paprika, sea salt, onion and garlic powder)
1/2 Cup Water
Easy Guacamole: (2 Avocados, 1 Lime, 1/4 Teaspoon Garlic Powder or to taste, a pinch of Sea Salt to taste)
Pink sauce 1(/4 Cup Salsa
2 Tablespoons Greek yogurt)
Enchilada sauce (1 1/2 Cups Tomato sauce, 2 Tablespoons apple cider vinegar, sea salt, 1/2 cup water, 1/2 teaspoon cumin, 1 teaspoon onion powder, cayenne pepper to taste)
In a small sauce pan mix enchilada sauce ingredients and bring to a boil, lower heat and simmer until leat is done. Add spices to taste as you go.
Brown the meat with the taco seasonings, add water towards the end
Mix white sauce ingredients
Mix guacamole ingredients
To serve, layer - tortilla, enchilada sauce, meat, white sauce, guacamole, lettuce and top with more red sauce
Note - the pic shows two tortillas, these are very dense and we decided that only one was necessary.
