Last night my hubby and I were talking about missing cereal. We both went online and looked for good granola or muesli recipes. Being that I am by very good at sticking to other people's recipes, I combined my Paleo Knockoff of Starbucks Pomegranate Vanilla Cashews with my new chia seed obsession and this was the result. I hope you like it as much a we do!
Ingredients
2 cups roasted mixed nuts / no peanuts
1/2 cup coconut shreds
1/4 cup coconut flour
1/4 cup stevia or honey (to taste)
1 teaspoon chia
2 teaspoons water
1/2 cup banana apple mash (blender, banana + apple + a drip of water to get it moving)
1 teaspoon cinnamon
1/4 teaspoon nutmeg
A pinch of salt
Banana quartered and sliced
1/4 apple minced
1/4 teaspoon coconut oil melted
Directions
Preheat oven to 300 degrees
Put chia in water and apple banana mash - set aside, this is your wet mix
Pulse nuts and coconut shreds in food processor until you reach a consistency that looks good to you - if you don't have a food processor you can use slivered almonds and mixed nuts (put in 3 plastic bags and hit them with a can until they are at the right consistency for you)
Pour into a bowl, add coconut flour, spices and salt - this is your dry mix
If using stevia, add to dry mixture. If using honey, add to wet mixture
Now, mix dry and wet ingredients until no powder is left - this is your granola mixture
Put granola mixture on a parchment or silpat lined sheet , thinning it out to about 1/2-1/4 inch thickness and breakig it into rough chunks with a spatula. Don't make it too perfect or else it will crumble too mch and not be "granola-y" enough.
Bake for one hour until it begins to dry out
In a bowl add melted coconut oil to apple and banana dices - this is your fruit mix
Pour the fruit mix on a silpat or parchment lined pan and bake with the "granola" mixture
When removed from the oven mix fruit and granola mixtures and f desired bake for 10 more minutes to dry out a little further.
Allow to cool over night, break up and pour into a clean and dry sealable container. Enjoy with almond or coconut milk.
