Makes 12 cupcakes
1/2 Large Avocado
4 oz Apple Banana Baby Food, or 1/4 cup Apple Sauce
2 egg whites
1/2 Cup Coconut Milk (it's best if you use the cream at the top of the can after refrigeration)
1 Teaspoon Baking Powder
1 Teaspoon Baking Soda
1/3 Cup Cocoa Powder
1/3 Cup Chocolate Whey Protein
1/2 Cup Almond Flour
1/2 Cup Stevia
2 Tablespoons Coconut Flakes
1/2 Cup Coconut Milk
1/2 Cup Enjoy Life Chocolate Chips or other Chocolate
2 Tablespoons Coconut flakes
For the cupcakes
Preheat oven to 350
Mix Wet Ingredients
Mix Dry Ingredients
Add Dry mix to Wet mix slowly, mixing as you go.
Fill cupcake liners 3/4 of the way full
Bake 12 minutes, do not remove early
For the ganache
In a microwave safe bowl heat ganache ingredients for 35 seconds, remove and stir until smooth. If not yet melted, microwave for an additional 30 seconds and stir until smooth.
Dip cupcake in ganache, then dip in coconut flakes. Top with a toasted hazelnut or almond.
If preferred, you can spoon ganache over the cupcakes.
