The other day when I was making my chocolate danish I realized that oopsies or rev rolls would make an amazing savory danish. I decided to experiment using some nitrate free hot dogs over the weekend and I have to say they were a great success! I hope you enjoy!
Ingredients
3 Eggs, Separated
1/4 Teaspoon Cream of Tartar
2 Ounces Cream Cheese (omit for strict paleo)
2 Tablespoons Melted Butter or Ghee
1-2 Tablespoons Grated Parmesan Cheese (swap for ground up crispy Bacon for Paleo)
A pinch of Sea Salt
1 Cup Grated Cheese of Choice (I used sharp cheddar)
6 Hot Dogs or Sausages of Choice
1/2 Onion, Sliced
2 Tablespoons Jalapeño, Minced
1 Additional Tablespoon Butter for Cooking Hot Dogs and Onion
Directions
DO THIS IN ADVANCE: in a skillet melt your 1 Tablespoon of butter and cook your hot dogs and onions over medium heat until the hot dogs are browned on the outside and the onions are wilted or almost caramalized.
Set hot dogs and onions aside to cool completely
Preheat oven to 300 degrees
Whip egg whites and cream of tartar to stiff peaks
In a separate bowl mix yolks, Parmesan, melted butter, salt and cream cheese
Gently fold the egg whites into the yolk mixture until no longer streaky, being careful not to deflate the egg whites
On a lined baking sheet using half of your grated cheese create 6 small mounds (reserve the remaining cheese for the topping)
Place a small dollop of oopsie mixture over the cheese mounds
Add hot dog, onion, and jalapeño
Cover with more oopsie mixture and top with remaining grated cheese
Bake for 25 minutes
Pop under the broiler for the last 2-5 minutes until lightly browned on top
Cool slightly and enjoy!
