Today I entered @dieffs pancake challenge and wanted to try something new. While my experiment yielded a sticky pancake it ended up being a perfect no grain bread pudding. It's funny how things work out sometimes, isn't it?
Ingredients
For the "Bread" Pudding
1 Med Banana, Ripe
1 Med Apple Cubed (I used an ambrosia apple)
1 Egg
1 Egg White
1/2 Scoop Vanilla Whey Powder
1 Tablespoon Almond Milk
1/8 Teaspoon Cinnamon (to taste)
1/8 Teaspoon Nutmeg (to taste)
Directions
In a blender, pulse until smooth
Place in a greased ramekin
Microwave on high for 45 seconds or until set
Or, bake at 350 until set
Or, in a well greased very good nonstick pan, cook as pancakes (they will be difficult to flip)
