3-4 Cups Cauliflower (1 head, steamed)
1 Cup Sour Cream or Greek Yogurt
1/3 Cup Chopped Chives or Scallions, fresh or dry
2 Ounces Cheddar Cheese, Grated
Sea Salt to taste
4 Slices Cooked Bacon, crumbled
In a blender, purée all but one cup of the cauliflower with sour cream, half of the cheese, all of the scallions and salt to taste. If you don't want any lumpiness just purée all the cauliflower, I like a bit of texture.
Place the blended mixture along with the remaining cauliflower in a broiler proof container.
Top with remaining cheese and broil until the cheese is bubbly.
Sprinkle crumbled bacon and extra chives over the top just before serving.
