So today I was working on a recipe idea that I had and it failed...miserably. On the flip side I realized that the texture and flavor of my dish strongly resembled a Filipino dessert called Puto Bung Bong (bong bong?). So, I quickly adapted it and am pleased to say that even my in laws enjoyed this one!
Ingredients
2 egg whites
1 tablespoon tapioca flour/starch
2 tablespoons ground psyllium husk (I grind mine in a clean coffee grinder)
1/2 cup heavy cream or coconut milk (your choice, almond milk might work too)
2 cups water
1/2 cup sweetener of choice
1 drop coconut flavoring*
1 drop pandan flavoring*
Purple food coloring as needed (optional)
Topping
Fresh coconut shreds
Grassfed butter or ghee
*Note - before the blog police start complaining in my comments let me remind you all that the starred items are NOT paleo as they have artificial ingredients so...use at your own discretion and if there are non artificial flavoring options please mention in the comments below!
Directions
Mix all ingredients
Place into a greased microwaveable container
Microwave on high for 2-4 minutes until it's no longer runny in the middle
Add toppings
Allow to cool
Enjoy!
