I'm not lazy I'm just particular about how I use my time ;) Okay, maybe I am a teensy tiny bit lazy but not too much, ask my mom I'm usually busying myself with one thing or anther. Anyway, enough about me, back to this easy guac. Sometimes I'm just in a rush and want to make a quick guac for a party or yummy snack. All you need is a blender and the ingredients and you'll be good to go in a jiffy!
This makes a large party sized bowl.
Ingredients
6-7 Large Avcoados, not overripe just barely softer than rock hard is fine.
The juice of 4-5 Lemons
One clove garlic
Half a medium sized onion roughly chopped for easy blending
1/4 of a med sized chile Serrano, seeds and membrane removed (more or less to taste)
1/3 of a bunch of Cilantro, washed
4 Tablespoons Sea Salt
Garlic Salt or Garlic Powder to taste
Directions
In a large bowl, dilute your salt into roughly 4 cups of water (or enough water to cover the peeled and seeded avocados)
Pit and peel all your Avocados, save at least 3-4 pits in a separate bowl. Put the flesh of your avocados in your salt water mixture.
In a blender, combine lemon juice, onion, cilantro and chile. Pulse until combined and smooth in texture - think green juice texture
Empty salt water out of the bowl with the avocados and begin adding the avocados to the blender one by one, blending to mix as you go. If the blender gets too full you can pour some of your mixture into a large clean bowl that you will use for finishing.
When all avocados have been blended thoroughly, pour mixture into your large bowl and season with garlic salt as needed.
Make sure to taste the guac, add more f anything you think is missing.
Now, add the avocado pits into the bowl of guac. This step, combined with the salt water bath will help prevent your guac from browning.
Serve up with some Paleo No Tortilla Chips and enjoy!!! Or, cover and enjoy the next day (the flavors will be even better the day after).
