I had ground beef in the fridge today and was feeling a bit sick of burgers so I opted for a baked meatball recipe. Yesterday I went a little crazy in the Mexican Supermarket so my fridge was chock full of chiles, avocados, tomatillos, fresh cheese and cilantro. So I put my mind to it and came up with this baby! I hope you enjoy it!
Ingredients
1 1/2 Cups Guacatillo Salsa (blend 2 tomatillos, 1 avocado, 1/4 White Onion, 1/2-1 jalpeño or serrano chile, 1/2 bunch of cilantro, 1/2 garlic clove, 1 1/2 teaspoons lime juice, sea salt as needed)
1-2 Pounds Ground Beef or Turkey
1/2 Cup Queso Fresco
1/2 Cup Crema de Mesa or Sour Cream (yogurt works too)
Fat of choice for pan searing
Garnish
Thinly sliced avocado
Instructions
In a bowl mix half each of the Queso fresco, sour cream and salsa. Add meat and mix well.
Portion out into individual meatballs.
Preheat oven broiler.
Pan sear the meatballs until cooked through. Place in an ovenproof container.
In a separate bowl mix remaining sour cream and salsa.
Pour mixture over cooked meatballs.
Broil for 5-10 min until the cream starts to get toasty and lightly browned.
Remove from heat.
Sprinkle remaining cheese over the meat and serve garnished with thinly sliced avocado.
