You're going to have to settle for this pic of the spinach under a fat juicy steak since I was WAY to hungry to even THINK of shooting a pic before plating (maybe next time). But, this brings up a good point, this spinach works AMAZINGLY with steak, especially when the drippings mix with the cream and form a delicious creamy steak sauce right there on your plate!
Ingredients
1 teaspoon grassfed butter or ghee (or a good serving of pan juices from your meat of choice)
1 clove garlic, minced
1 oz cream cheese
1/4 cup heavy whipping cream or milk of choice (more or less to taste) - if you use coconut milk this dish will resemble the Filipino dish laing although it will be lacking the spices and seasonings (ginger, chile, fish sauce)
Sea salt to taste
Freshly cracked pepper to taste
Directions
Over medium heat melt and brown your butter (if using ghee just melt)
Add garlic and cook briefly until softened
Add cream cheese and cream/milk and whisk until completely combined
Bring to a quick boil
Reduce heat and add spinach
Stir to wilt and remove from heat when the spinach starts to wilt
Allow to sit until all the spinach wilts completely
Season with sea salt and pepper
Enjoy!
