The hubby loves stopping by a certain coffee shop on his way into work in the mornings. He used to pick up a sweet treat for breakfast on the way in. While I'm sure he enjoys the breakfasts I've been making him I thought I'd surprise him with some paleo "coffee shop treats" today. This scone was inspired by both civilized caveman's chocolate blueberry scone and my grandmother's mounds bars, which closely resemble the paradise pie at Chili's. These are the perfect grab and go great sice they have enough calories and protein to keep you going.
Makes 16 scones
Ingredients
1 Tablespoon Chia Seeds (ground or whole, it's your call)
3 Tablespoons Water
2 Cups Almond Meal
1/2 Teaspoon Sea Salt
1 Teaspoon Baking Soda
1/2 Cup Pecans, Chopped
1/4 Cup Shredded Dried Coconut
1/2 Cup Enjoy Life Chocolate Chips
3 Tablespoons Stevia (to taste)
Directions
Mix Chia and water - allow to sit for 5-10 minutes
Preheat oven to 375
Mix all other ingredients
Add chia to mix
On a lined baking sheet make two circles with your dough about 1 1/2 inches high. Cut each circle into pizza wedges, making 8 slices per circle.
Bake for 25 minutes or until desired firmness is achieved.
Once out of the oven I like to drizzle mine with a ganache made of 1 tablespoon chocolate chips and 2 tablespoons coconut milk (microwave for 35 seconds, mix and drizzle with a fork or spoon or dip the scones).
