This morning I made flax crackers and it got me thinking about making cookies with flax. This recipe is super simple and I'm sure it can use some improvements but it was a big hit in my home so I thought I'd share with you.
Makes 7 Cookies - these are best prepper ahead and kept in the freezer until you are ready to bake.
Ingredients
1/4 Cup Nut Butter of Choice
1/4 Cup Flax Meal
1/4 Cup Boiling Water
2 Tablespoons Sweetener of Choice (more or less to taste, 1/4 Cup may work best for some)
2 Ounces Sugar Free Dark Chocolate, cut into chunks
A pinch of sea salt
1/2 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
Directions
In a bowl mix all dry ingredients except chocolate.
Pour in boiling water and stir to combine.
Allow to sit for 3-5 minutes until the mixture is tightened up a bit. If its still too loose add an extra teaspoon or two of flax meal and allow to sit for a few more minutes.
Place mixture in the fridge for 10 minutes or so.
Once the mixture is fully cooled off stor in chocolate.
Portion out cookies onto a silpat or parchment and freeze until ready to bake.
Bake at 350 for 15-20 minutes until the tips of the cookie are no longer wet.
Cool completely and enjoy!
