Today I decided to make myself some flax crackers and cheese for lunch and while I ate I had an epiphany of sorts. I envisioned a crispy and light chocolate chip cookie made from cheese. I also had the idea to make a flax chocolate chip cookie, which wasn't all that successful but I haven't given up on it yet. More on that later.
This is a super simple and fast to prepare crispy and sweet treat. If you're in the mood, you can even roll these up into come shapes and stuff them with keto or paleo ice cream. I chose to use sweetener in mine but you can use coconut sugar if you'd prefer.
Ingredients
1 tablespoon grated mild cheese, I used a medium cheddar
1/2 teaspoon sweetener of choice (I used stevia)
A few chocolate chips (I used 4 chunks that I broke off of a sugar free chocolate bar)
Directions
Mix ingredients and place on a parchment or silpat lined plate or pan. Microwave for 1 minute give or take until the cheese is crisping. No microwave? Bake at 350 until the cheese starts to crisp.
Remove from oven. If forming into cones or tacos, shape them before they cool.
