I was doing my usual IG browse this afternoon when I stumbled on this amazing looking avocado dish on @Nineknives feed. Practically drooling, I left him a comment asking for his recipe and decided to make it for dinner.
Ingredients
1 Avocado, Sectioned
1/4 Cup Crushed Pork Rinds
1 egg
2 strips of bacon, cut into shorter sections to fit around your avocado slices
1 clove garlic, sliced thinly
Spices and seasonings if desired (he recommended Italian seasonings, which in my drool induced haste I forgot)
Directions
Preheat oven to 425
Beat your egg to make an egg wash
Mix seasonings with pork rinds
Dip avocado section in egg, then pork rind, then wrap with bacon and top with garlic.
Bake for 15 minutes or until golden brown
Note - I ran out of bacon and made these before I restocked and they were still tasty. I added sea salt. If you aren't watching your dairy I think Parmesan cheese and spices would also make a great coating. I'll definitely be experimenting more with this idea.
