I love cauliflower mash but if there is one thing I've always felt that it lacked it would be "stickiness," like what you get when you mash potatoes. I like being able to scoop things and have a solid (not rock hard) spoonful to deliver to the plate, or my mouth! So, I had the idea to grind up some chia seeds an add them into my mash. The texture was perfect! It was airy yet sticky enough to stay on the spoon. This method can be used for any cauliflower mash recipe, not only the one listed below.
Ingredients
2 Tablespoons Chia Seed, ground in a coffee grinder
1 Head Cauliflower, steamed
1/4 Cup Chopped Onion or 2 Scallions, chopped
1 Tablespoon Fat of Choice
1/4 Cup Milk of Choice
1/4 Cup Cheese of Choice (optional)
Sea Salt, Pepper and herbs to taste
Directions
Preheat oven to 350
In a blender or food processor pulse cauliflower, onion and milk
Once smooth, add in remaining ingredients (reserving some cheese for the top) and place in an ovenproof dish
Top as desired (cheese, herbs, pork rinds, bacon)
Bake for 30 minutes until the sides look lightly browned
Broil for 5 minutes before serving to crisp cheese (optional)
