This makes a huge serving good for two people. Since the bread is heavier than grain bread it will be a lot more filling, don't let your eyes deceive you like they did me! Also, I poured some of my coffee on this when I was finished just I see how it would taste and it was pretty yummy, definitely a texture variation worth trying.
1/4 + 1/8 th of a loaf of low carb psyllium husk bread
1/2 scoop vanilla protein
1/4 cup water or coffee (I used coffee)
2 tablespoons sweetener of
1 tablespoon PB2 (optional)
1/4 teaspoon cinnamon
Mix everything except the bread
Coat bread on both sides and cook over medium high heat until both sides are lightly browned
Serve with butter and whipped topping or topping of your choice.
To bake as a bread pudding or in a crock pot just add the bread and mixture to an oven proof container or crock pot and bake at 350-400 until the eggs set (15-25 min) or longer for crock pot.
