When I was shopping this afternoon I saw some beautiful fresh langostino. Since I knew dinner would have to be a fast prep job I picked it up since it doesn't get much easier than pre-cooked shellfish. I had some beautiful asparagus in the fridge and chose to serve over some miracle rice to add bulk.
Ingredients
1 1/2 Lbs shelled and cooked langostino
1 1/2 cups chopped asparagus
1/4 cup salted butter or ghee
1 heaping tablespoon minced garlic
2 tablespoons grated parmesan cheese
Sea salt and fresh cracked pepper to taste
1 teaspoon lemon or lime juice
Directions
Cut off one tablespoon of the butter and melt in a smaller pan
Place asparagus in the small pan and cover to cook through until they turn bright green (no need to stir)
In a large sauce pan, melt remaining butter over medium high bear while asparagus cooks. Allow butter to continue cooking and begin to lightly brown.
Place garlic in browned butter and allow to cook briefly (1-2 minutes)
Immediately add langostino and heat for 1-2 minutes
Remove from heat
Add asparagus, parmesan, and lemon juice
Season with sea salt and pepper.
Serve over miracle rice or eat as is.
