This morning I woke up and all I could think of were strawberry Crepes. While before I would just thin out my instant pancake mix somehow I didn't see that working with my new Paleo self, so I got a little creative. I'm very pleased with my results, I hope you enjoy them too!
Just a heads up you will need a VERY good nonstick pan for this. Also, this recipe makes two Crepes which for me was a single breakfast serving. I guess I was hungry!
Ingredients
1/2 Teaspoon Ghee or Coconut Oil
2 Eggs
2 Tablespoons Almond (or coconut) Milk
1/2 Banana
A dash of vanilla if your Almond milk is plain
Topping
One large strawberry
A pinch of salt
1/4 Teaspoon of Stevia or Honey
1/2 Teaspoon Unsweetened Coconut Flakes
Directions
Place pan on med-high heat source
Grease with a little ghee
In a blender, combine all the crepe ingredients, mix until smooth
Pour half of your blended mixture in your pan and swirl around to make sure the pan is coated in the mixture, the layer should be very thin
Reduce heat to med-low
Gently slide a thin silicone spatula inder the edges going around the perimeter of your crepe when the sides start to look cooked
Start gently rolling your crepe onto itself
When completely rolled, turn out onto a plate
Repeat with the other half of the mixture
Top with sliced strawberries, sprinkle with stevia and a pinch of salt, and coconut flakes.

NOTE - if your crepe falls apart when rolling don't worry, these taste good no matter how they look so just scrble them up and chow down!
