It's no surprise that I'm on IG and I cyber gawk food on the regular. Every one does it at some point, right? Ha ha! Well I've been cyber stalking anabolickandy's bacon wrapped asparagus chicken for a good week or so and finally decided to make it today. Of course, I had to put my spin on it by adding toum but in all honesty The brains behind this recipe is Kandy, so credit given where credit is due :) Thanks gal for coming up with this one!
This makes 5 large (Costco sized) chicken breasts - we could barely finish half a breast per person
Ingredients
2-4 Tablespoons Toum (enough to coat the chicken for a marinade)
10 Asparagus Spears, washed an cut in half (one side will have a spear, the other won't)
5 Large Chicken Breasts, butterflied
10 Bacon Strips
2 slices provolone cheese, cut into strips so you have enough cheese for all the chicken (optional, paleo you can skip this)
Directions
Coat your chicken in toum and allow to marinade for at least one hour
Preheat oven to 375
In a baking dish, place one slice if cheese and four pieces of asparagus (equals two slices) inside each chicken breast
Wrap each breast in two slices of bacon
Bake for 45 minutes - at 375 for 30 min and raise the temp to 400 for the last 15 minutes
I used a meat thermometer since I'm infamous for overcooking baked chicken but 45 minutes was exactly how long it took me :)
Serve with salad or if you are trying to get all your calories in a short amount if time you can serve with my spicy white bacon Mac n cheese, recipe to follow.
