I tried my hand at Paleo Bread today. Again, I did some research, then went into the kitchen and made this up as I went.
Ingredients
4 eggs
Half a banana (mashed and as close to green as you can get it)
1/2 can coconut milk
1/2 cup coconut flour
1 teaspoon onion powder
2 teaspoons coconut oil melted
1/2 teaspoon baking soda
2 teaspoons salt (to taste)
Directions
Preheat oven to 350
Line a loaf pan with foil or parchment
Beat eggs
Add all other ingredients and mix until dough is sticky (if the dough is too loose add more coconut flour, it too dry add coconut milk, if crumbly add a little more coconut oil)
Pour in loaf pan
Bake for 40 min or until peaks are browned - the bread will only be midway up your loaf pan. For a full loaf you will need to double the recipe and bake longer.
Slice and eat, or cool and toast up later
This recipe yields a dense bread that can easily be modified with spices, garlic, nuts or fruit (remove onion powder if using fruit)
